Marble Cake


This is a great family cake which my family loves and always bugs me that I never make it.
I love it too, unless it doesn't come out of the pan. Make sure you butter and flour your pan well.






A pastry brush and melted butter get the job done easily


This is my new kugelhupf pan. It works great. A bundt cake form works too, although slightly different. The kugelhupf is higher and has a very nice shape on top.




Recipe for Chocolate Marble Cake

1/2 pound butter (room temperature)
400 grams sugar plus 50 grams (2 1/4 cups)
5-6 eggs
300 grams flour (2 cups)
1 heaping teaspoon baking powder
1/2 cup sour cream or yogourt
1/3 cup cocoa (mix with the extra 50 grams sugar)
Preheat oven to 325° F
Cream the butter and sugar together, then add the eggs 1 or 2 at a time. Mix the flour and baking powder together and add slowly to wet mixture. Add a nice dollop of sour cream or yogourt or both. Take about half of this mixture and pour into your greased pan. Add the cocoa and sugar mixture to the rest. Fold the chocolate mixture gently into the white mixture. You don't want to scrape the bottom of your cake pan when you do this. You want the cake to come out of the pan!
Bake at 325° or slightly higher, depending on your oven, for 1 hour. Let sit for 10 min before removing from the pan.
Enjoy! (maybe with some whipped cream...yum)
