Easy Sponge Cake (Biskuitteig)

This is a super easy sponge cake recipe that I use for alot of cakes. It works very well with cakes that have whipped cream as the icing.  You can use other pans, but I like a springform pan like this one. It's deep and releases the cake well






In a bowl, crack 4 eggs and add 4 tablespoons of warm water.
Beat the eggs for about 3-5 minutes so they start off like this:



 and then look like this:


Nice and thick and pale.
Add your sugar and mix it in for 30 secs. Add your flour and baking powder and mix in slowly so you don't deflate your eggs too much. Don't overmix!
Bake at 325-350 degrees until cake bounces back when touched on top. This cake was baked for 40 minutes in a 9 in springform pan. A flan pan usually takes less than a half hour.




 Recipe

4 eggs + 4 tablespoons of warm water
200 grams of sugar (1 cup )
200 grams flour (1 1/2 cups)
1 tsp baking powder
(Lemon zest or Vanilla can be added with the sugar if you like)

Bake at 325-350 degrees F

The easy part of this cake is you can easily modify the size of the cake when you remember the basic amounts. For every egg you have 1 tbsp of water, 50 grams sugar, 50 grams flour plus a little baking powder. I use this recipe for strawberry flan which calls for a 3 egg recipe.
